This recipe is pretty easy, fun to cook and yum to eat! you can have this dish at any time of the day! Breakfast, lunch or dinner!

INGREDIENTS

  • 6 medium russet potatoes

  • 1 medium onion, finely chopped

  • 3/4 cup all-purpose flour

  • 3 eggs

  • 1/4 cup of grated cheese

  • Oil as needed

  • salt and pepper to taste

Method

Step 1

In a food processor add the peeled potatoes, and shred them.

Step 2

Rinse shredded potatoes until water is clear, then drain and squeeze dry. Place shreds in a bowl, and mix in the onion, flour and egg until evenly distributed.

Step 3

Get a handful of the batter, and make a patty shape, continue with the remaining batter.

Step 4

Heat enough oil so that it is covering the bottom of the frypan, put over medium-high heat. When oil is sizzling hot, place potatoes into the pan in a 1/2 inch thick layer. Cover the whole bottom of the pan, or make separate piles like pancakes. Cook until nicely browned on the bottom, then flip over and brown on the other side. It should take at least 5 minutes per side. If you are cooking them in one big piece, it can be cut into quarters for easier flipping.

Step 5

Remove from pan, and drain on paper towels. Season with salt and pepper and serve. Enjoy!
