This fried rice is super quick, easy, and very cheap!
Most of the ingredients you will have at home!
you can add any spare veggies that need to be used in the fridge!
INGREDIENTS
1 cup white long-grain rice
2 teaspoons vegetable oil
2 eggs, lightly whisked
2 bacon rashers, chopped
1 carrot, peeled and grated
1 small brown onion, finely sliced
1/2 cup frozen corn or peas, thawed
1 tablespoon soy sauce
METHOD
Step 1
Cook the rice in a large saucepan of boiling water for 12 minutes or until tender. Drain and leave to cool.
Step 2 Heat oil in a non-stick wok or large frying pan over medium heat. Add eggs. Swirl over the base to form an omelette. Cook for 2 minutes or until set. Set aside to cool slightly. Cut it into short strips.
Step 3 Add bacon to the wok. Cook 4 minutes until lightly golden. Add carrot. Stir fry 1 minute. Add onion, corn (or corn) and rice. Cook, stirring, for 3-4 minutes. Add egg and soy sauce. Stir until heated through.
