Quarantine Gnocchi and an easy Napoli sauce!

In times like these when we have plenty of time to kill, why not make something that takes a while to make, and delicious to eat?

When in quarantine who doesn't have potatoes, flour and eggs?

These three ingredients make up a great base for the main meal "gnocchi"!

 

INGREDIENTS

For the gnocchi

  • 8 potatoes

  • 2 teaspoons of salt

  • 2 teaspoons of pepper

  • 2 eggs, lightly whisked

  • 3 cups all-purpose flour, extra to dust


For the Napoli sauce:

  • 2 tablespoons olive oil

  • 2 small brown onions, finely chopped

  • 2 cloves of garlic, crushed

  • 2 tins of diced tomatoes (800grams)

  • 1/8 cup of mixed herbs

 

METHOD

Step 1

Add the potatoes to a large pot of cool salted water. Put the lid on. Bring the water to a boil and cook for 20-25 minutes, or until a fork can easily pierce a potato. Drain the potatoes and set aside until cool enough to handle but still warm.


Step 2

Using a peeler or your fingers, remove the skin from the potatoes. In a large bowl, mash the potatoes until all lumps are gone. Add the salt and pepper and mix well. Make a well in the centre of the potatoes and add the whisked eggs into it. Then, using your hands, gently mix it into the potatoes until evenly distributed.

Step 3

Put 2 cups of flour onto a clean surface and add the potato dough onto it, keep adding the remaining last cup of flour. Only use as much flour as you need along the way until the dough loses stickiness and becomes more solid. Slice the dough into 8 parts. Roll out 1 part into a long rope, about 1 inch wide, cutting in halves until you get about 3cm in length pieces, decorate as desired. A good technique that I use is you dust a fork with flour, and slide each gnocchi square from the base of the fork to the bottom, to make a nice, and decorative shape. Make sure that you keep each section separate! as that is the groups you will be cooking them in!


Step 4

Bring a saucepan of salted water to the boil over medium heat. Add the first group of gnocchi, and cook until they rise to the surface. Use a slotted spoon to drain and transfer to an ovenproof dish. Repeat, this step, with the remaining gnocchi.

Step 5

Now the Napoli sauce! in a medium-sized pan, heat up the oil until it goes watery like. On low heat, add the onion and garlic, stirring occasionally. When the onion goes soft and transparent like mix in the tomatoes and the mixed herbs. add the lid on and leave to simmer for 10 minutes. Stirring occasionally. add a little bit of the sauce to the gnocchi so it doesn't stick.


Step 6

Serve and enjoy!
